CINNAMON CHIP SWIRL BEER BREAD WITH APRICOTS

Ingredients

1 box Cinnamon Chip Swirl Beer Bread Mix
355 mL beer (or any carbonated beverage)
2 Tbsp. butter, melted
1/2 cup dried apricots, chopped

Instructions

Preheat oven to 350°F. In a large bowl, place Cinnamon Chip Swirl Beer Bread Mix and add carbonated beverage. Mix well, but don’t over-mix. Add chopped apricots to the mixture. The mixture will be sticky. Scrape half of the batter into a lightly greased 8" x 4" or 9" x 5" loaf pan. Sprinkle with a couple of tablespoons of the sugar mixture (from Packet Two). Top with rest of the batter, then pour the melted butter over the top of bread and then top with the rest of the sugar mixture. With a table knife, lightly swirl the topping into the batter. Bake for 55-60 minutes for the 8" x 4" loaf pan, 45-50 minutes for the 9" x 5" loaf pan or until top is golden brown.
